And these are seriously awesome.
I'm not going all raw or vegan or anything*.. I just wanted a quick little treat that I (or the kiddos- they LOVE these after dinner- score one for Mom!) could grab during the day and not feel guilty about it. It's really hard to be a healthy eater when you are at home all day and there are bags of chips (what? they're organic!) hanging out and I am a serious snacker. It's sort of embarrassing how many salty snacks I can take down in a sitting.
But since we are going at a faster pace this summer, a grab & go snack is ideal.
These raw (safe!) chocolate chip cookie dough balls are ideal for a quick pick-me-up when I feel like I am drinking enough water, but am getting kind of hungry in between meals. They keep in the refrigerator beautifully. Mine are just sitting on a parchment-lined plate. And they take like 10 minutes to put together. Easy peasy lemon squeezy!
*not that there's anything wrong with that!
Raw Chocolate Chip Cookie Dough Balls
makes about 12-15 balls, depending how large you roll them
adapted from The Kitchn
1 cup raw cashews
1 cup rolled oats
1/4 tsp. kosher salt
1/2 tsp. cinnamon
3 Tbsp. pure maple syrup
1 Tbsp. vanilla extract (I actually find this to be a little too much, so I am going to reduce to 1-2 tsp. for our next batch)
1/4 cup mini chocolate chips (I use Ghiradelli)
In a high-speed blender (we have this one) or food processor, pulse the cashews, oats, cinnamon and salt until it forms a fine meal (this won't take long- if you pulse too long, you will make cashew butter).
Add the maple syrup and vanilla extract and pulse until the dough just comes together. Remove to a bowl and use a rubber spatula to mix in the chocolate chips and to just make sure all the dough is sticking together.
Using either a cookie scooper (this would be ideal, but definitely not necessary) or a spoon, create balls of dough. I used a spoon and then rolled the balls between my hands, which was slightly messy, but not a big deal. If a ball has too many chocolate chips, it will be harder to roll, so make sure you have your chocolate chips dispersed evenly.
Eat right away or refrigerate to make them a little more solid. You could also freeze them! Enjoy! xx
