True story: I have a section in the "Notes" section of my phone dedicated to topics to write about on this blog. Sometimes at night, I think of the most random things that would make the best fodder for a blog post, but of course, these inklings are nearly never revealed to me as I sit at the computer.
And I imagine that happens to a lot of us, when we come to create at a computer. Because this is the place where we can easily access loads of information, mostly things we don't need and sometimes things that make us feel feelings that aren't so happy.
For this reason, my life needs a lot of reflection. I am the kind of person who likes to absorb a lot of information. I am supremely interested in so many things, but a lot of times, this gets in the way of me creating anything at all. I read a lot of blogs and spend probably too many minutes on social media and sometimes I experience the jealousy that comes along with that. So I have to reflect. I have to remember my goals and my dreams and my intentions and remember that my life, personality and desires are different from anyone else.
So I try to remind myself of one very important truth: what I am doing is beautiful too. Please remember this. Whenever you are feeling overwhelmed, just remember that your life, journey, dreams, work are beautiful too.
All that to say.. I want to create recipes and meal ideas for you that you are able to do, no matter your skill level in the kitchen and that are also delicious and satisfying, no matter your skill level in the kitchen. And I'm not really ever looking to reinvent the wheel or surprise you with some totally crazy and different combination. My goal here is to simply inspire you to enter your kitchen and to cook. It's hard for all of us sometimes.
Parsley & Hemp Seed Pesto
This recipe makes a small amount, maybe 1/3 cup, but is easily doubled and tripled. This is the perfect amount for about 1/2 lb. of pasta, coated liberally or 1 lb. of pasta, coated conservatively. You can also use pesto for about a million other things, such as slathering toast, stirring into soup or eggs. Or you could add more oil and lemon juice to make this into a thinner dressing. Any other suggestions are welcome here!
1 cup loosely packed parsley leaves
1 clove garlic
1 Tbsp. hemp seeds (feel free to add more or to substitute parmesan cheese)
zest of 1 whole lemon
juice of 1/2 lemon
1/4 cup olive oil (add more or less depending on the consistency you want)
1/4 tsp. kosher salt
1/8 tsp. black pepper
Place all ingredients in a mini food processor and whir until all combined. Taste and add more olive oil, lemon juice, salt or pepper as desired.
*If you don't have a mini food processor, you could probably make this in a regular sized one, but you might want to make a larger amount. You could also chop and chop and chop the parsley and garlic and hemp seeds together and then mix in the oil, lemon juice and seasonings if you don't have a food processor at all. Don't let the equipment deter you.
