I get asked a lot what I feedmyself and what I feed my kids. We eat very little processed food and nearly everything we eat comes from scratch. There are exceptions and we're certainly not perfect. The biggest advice I have for people who are having a hard time figuring out what to eat is to make nutrition a priority. Keep a well-stocked pantry full of condiments/sauces, grains and pastas and beans. Never run out of fruit and vegetables. When it comes to kids, give small portions of many things. Be in charge. Require them to try things before leaving your table. Prep ahead of time if you are very busy.
Here, a typical lunch plate: Plain quinoa with a little salt (I made 1/4 cup quinoa for the three of us), leftover roasted chicken, raw almonds, blueberries, a tomato slice (neither one ate this), fresh edamame from our CSA, quick zucchini saute (love to add a little chili flakes in this).
More fruits, veggies and whole grains than proteins or processed foods. I will share more of our plates in the future! Make an effort this week to make nutrition a priority and to take charge when it comes to the food the kids are eating.
