Did you know that you can make crushed tomatoes at home? This can be a cost-effective and easy way to store your tomatoes for the winter. I love to use crushed tomatoes to make pasta sauce and pizza sauce, so when I received a bounty of tomatoes far larger than I could just eat, I decided to crush them and freeze them. After some research, I decided to use my box grater. Instead of having to boil and peel the tomatoes, I simply cut each tomato in half, then, holding the skin, I grated the tomato on the medium holes of the box grater right into a bowl. It took me about 20 minutes to "crush" 21 tomatoes and I ended up with 6 cups of crushed tomatoes. I froze them in 2-cup increments and made sure to freeze the bags flat so that I ended up saving as much space in my freezer as possible. I will probably use these tomatoes within the next 3 months, but if I wanted to save them for longer, canning would probably be a better option. Hope that helps you use up the rest of the summer tomatoes!
