I had some leftover proscuitto from when I made Pasta with Greens & Proscuitto and I was suddenly inspired when I saw a picture of proscuitto-wrapped melon. I had never had the combo, but it seemed like the perfect excuse to use up some of my fresh ciabatta from the farmers' market.
Proscuitto is a dry-cured Italian ham and is traditionally eaten uncooked, like in this preparation. The combination of the slightly salty ham and the sweet and soft melon is perfect. Put a few slices of ripe cantaloupe, a few slices of proscuitto and a pile of something green (I used pea shoots, but anything will do) on a crusty piece of bread. Season with a little bit of olive oil and some pepper and you've got yourself a sandwich. It would also make the perfect small appetizer combination.
